WHere is a home-style version of a cocktail from a new cocktail list. This is a large-volume pre-mixed which is bursting with the tastes of a festive period, rendering it ideal for a celebration. Save the extra cordial to use in brunch beverages, desserts, or for additional servings of the drink.

Makes enough for 10 guests
To make the Citrus Syrup (makes 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Drink (yields 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (as made above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Directions
To prepare the Citrus Syrup: Put all the items into a pot, bring to a gentle boil, agitating to dissolve. Next, take off the stove and let it to cool completely. Pour into a sterilised bottle, cap it keeping it chilled, it will last for about one month.
For the Premix: Pour every liquid ingredients into a sizeable container, leave to sit for one hour, then strain best through a fine cloth, so it's completely strained.
To serve: Measure 85ml of the batch mix to a stirring glass filled with ice, gently stirring gently for a minute to chill. Filter to a chilled martini glass or similar, top with the cranberries and finish with a brief mist with the mandarin essence over the top.
